‘Roasted Fennel & Grapefruit with Carrot & Fennel Sauerkraut’
Recipe for Roasted Grapefruit & Fennel with Organic Carrot & Fennel Sauerkraut:
Preheat the oven to 375°F (190°C).
Cut the grapefruits in half and place them cut-side up on a baking sheet.
Arrange the sliced fennel around the grapefruit halves.
Drizzle the olive oil over the grapefruit and fennel, and season with salt and pepper.
Roast in the preheated oven for 20-25 minutes, or until the grapefruit is slightly caramelized and the fennel is tender.
While the grapefruit and fennel are roasting, heat the Organic Carrot & Fennel Sauerkraut in a small saucepan over low heat.
When the grapefruit and fennel are done roasting, remove them from the oven and let them cool for a few minutes.
To serve, spoon some of the Organic Carrot & Fennel Sauerkraut onto each grapefruit half and sprinkle with additional salt and pepper if desired.
