Why You’ll Love It
- Spicy, cheesy, crunchy comfort food with a fermented twist.
- Hearty red beans add depth and make it more filling.
- Perfect for sharing, snacking, or a very unserious dinner.
Ingredients
- 1 large bag of tortilla chips
- 1½ cups shredded cheddar (or vegan cheese)
- 1 pack black beans
- 1 jar The Cultured Food Company Chilli Sauerkraut
- 1 avocado, diced (or guacamole)
- 1 jalapeño, sliced
- 1 small red onion, diced
- ½ cup sour cream (or vegan yoghurt)
- Fresh coriander
- Lime wedges
For the spiced beans:
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper, to taste
Method
- Cook the beans: Heat a little oil in a pan over medium heat. Add the chopped onion and cook until softened. Stir in the garlic, paprika, cumin, salt, and pepper. Add the black beans and simmer for a few minutes until heated through and well-coated in the spices.
- Layer the nachos: Spread a layer of tortilla chips on a baking tray. Spoon over the spiced black beans and sprinkle generously with shredded cheese.
- Bake: Place in a preheated oven at 180°C for about 8–10 minutes, until the cheese is melted and bubbly.
- Add the finishing toppings: Remove from the oven and add spoonfuls of The Cultured Food Company Chilli Sauerkraut. Top with diced avocado, sliced jalapeños, sour cream, fresh coriander, and a squeeze of lime.
- Serve: Dig in while the cheese is still gooey and the sauerkraut brings that tangy, spicy crunch. Perfect for sharing… or keeping all to yourself.
